New Chef, new table !

The Christophe Bacquié restaurant become The Castellet Gastronomic Table, an exceptional gastronomic table, focused on a refined cuisine with marine and vegetables flavours.

Working alongside Christophe Bacquié for the past 10 years as his second-in-command, Fabien Ferré now become the new Executive Chef of the Hotel & Spa du Castellet. To take on this new challenge, Fabien Ferré is surrounded by his closest collaborators: Guillaume Cocault at his side in the kitchen, Loïc Colliau and Francois Luciano in the pastry department, and Jonathan Pral in the sommelier service. A talented and ambitious team, determined to conquer the stars and above all, ready to offer guests an unforgettable experience.

Restaurant open for lunch on Saturday and Sunday, for dinner from Wednesday to Sunday.
Pets are not allowed in the restaurant.

A cuisine with character, refined and sincere

Chef Fabien Ferré creates gastronomy with a strong local identity which celebrates and enhances the Provençal terroir. A cuisine that is both authentic and creative, focused on the essential... the product! 

Born into a family of pastry chefs and farmers' grandparents, Fabien has always admired the work of producers and now seeks to pay tribute to them through his culinary creations. The Chef proposes a "Vegetable Expression" menu, to put the vegetable at the centre of the plate, but always with an animal or marine ingredient to bring character to the dish. 

Passionate about the delicacy of seafood, fish and shellfish, the Chef also offers a "Marine Expression" menu. "It's a real chance to be able to select your own products every morning at the Sanary-Sur-Mer market, only 20 minutes from Le Castellet".

A contemporary decor overlooking nature

In contrast to the hotel's chic and discreet classicism, the Castellet Gastronomic Table offers a resolutely contemporary space. Its design is deliberately uncluttered, with light tones, where wood, aluminium and slate blend harmoniously. Here, an olive tree and a vine remind us of the profoundly Mediterranean roots of the Chef's cuisine, and an imposing painting by Martin Berger, Les Abysses de Méditerranée, show that the Chef's inspiration is nourished by the products offered by the Big Blue.

The decor of the gastronomic table is well thought out and appealing: circular white laminate tables with rounded edges, soft and soothing carpeting, service without tablecloths, an alcove where a discreet table d'hôtes is nestled, and a second, more intimate room with an unobstructed view of the park and the gazebos.

To share an aperitif or a digestif in the open air, enjoy a moment on our terrace, in the shade of the arbours. You will appreciate the lapping of the overflowing pools and the view over the park.
